A super-easy Thanksgiving favorite.
This mixes peppers and squash and corn and basil…just about everything in the farmers’ market right now.
In Rome these are served as an antipasto in summer, but they’re enough for a lunch main dish or dinner.
I learned how to make this from Joyce Goldstein when I was working with her on a cookbook many years ago and it’s made a comeback of late.
